Couscous with onion, tomatoes and scrambled eggs

Egg Onion and Tomatoes Couscous

Ingredients:

2 Cup Instant Couscous
1 Tblsp Olive Oil
1 Medium Onion, finely chopped
2 Medium Tomatoes, diced
4 Eggs
1 Tsp Ground Cumin
Salt and Pepper to taste
1 Tblsp Flat Leaf Parley, finely chopped

Method:

  1. Cook couscous (follow packet instructions) then set aside.
  2. In large frying pan heat the oil then sauté the onions until lightly golden.
  3. Add tomatoes, cumin, salt and pepper, cook stirring for 1-2 minutes.
  4. Crack in eggs, scramble and mix well, cook for 1-2 minutes.
  5. Add couscous, mix well, cook for 1 munity then remove from heat.
  6. Garnish with parsley then serve.
