Algerian Raisin and Mint Couscous

Couscous done with saffron raisins and mint

Ingredients:

2 cups water
teasp saffron
1 teasp extra virgin olive oil
2 cups couscous
teasp salt
cup raisins
3 Tablesp fresh mint chopped

Method:

  1. In a saucepan boil 2 cups of water then add saffron.
  2. Remove from fire, covered and let stand for 30 minutes.
  3. Return the saucepan to the fire, bring to a boil then add in the olive oil, salt, couscous, and raisins.
  4. Remove from the heat, cover, and let stand for 30 minutes.
  5. Garnish with mint then serve.
