Sweet pumpkin, cinnamon, raisins, coconut and nuts pudding
500g butternut pumpkin, peeled, seeded and diced
1/2 cup caster sugar
1/2 cup raisins
1/2 cup grated coconut
1 Tblsp ground cinnamon
2 Tsp ground cardamom
1/2 cup mixed crushed nuts
Golden Syrup for drizzling
In a large saucepan, add the water and pumpkin then over a low heat stew the pumpkin until soft and fluffy.
Stir occasionally to prevent the pumpkin from burning and sticking.
Stir in the sugar, cinnamon, cardamom then simmer for another 3-5 minutes.
Let the mixture cool then stir in the raisins, coconut and nuts.
Pour the mixture into serving bowls then drizzle with syrup and serve.
