Egyptian Pumpkin and Nuts Pudding

Sweet pumpkin, cinnamon, raisins, coconut and nuts pudding

Egyptian Pumpkin and Nuts Pudding


500g butternut pumpkin, peeled, seeded and diced
200ml water
1/2 cup caster sugar
1/2 cup raisins
1/2 cup grated coconut
1 Tblsp ground cinnamon
2 Tsp ground cardamom
1/2 cup mixed crushed nuts
Golden Syrup for drizzling


  1. In a large saucepan, add the water and pumpkin then over a low heat stew the pumpkin until soft and fluffy.
  2. Stir occasionally to prevent the pumpkin from burning and sticking.
  3. Stir in the sugar, cinnamon, cardamom then simmer for another 3-5 minutes.
  4. Let the mixture cool then stir in the raisins, coconut and nuts.
  5. Pour the mixture into serving bowls then drizzle with syrup and serve.
