Potato with garlic, chilli and cumin

Potato and Garlic Dip

Ingredients:

600g potato
5 cloves garlic
1/2 cup olive oil
3 tablesp vinegar
1/2 teasp chilli powder
1/2 teasp cumin powder
salt and pepper to taste
Garnish with flat leaf parsley, finely chopped

Method:

  1. Boil the potatoes with the skin on.
  2. Peel and crush garlic.
  3. When potatoes have softend, peel and cut into small chuncks.
  4. Put all the ingredients into a blender until smooth.
  5. Garnish with parsley and serve with pita bread.
