Shakshouka

Scrambled eggs mixed with tomatoes, peppers, cumin and chilli

Shakshouka

Ingredients:

4 Eggs
4 tomatoes, peeled, seeded and chopped
1 bell peppers, seeded and chopped
1 tablesp olive oil
1/4 teasp cumin
1/4 teasp chilli powder
Salt and pepper to taste
1 tablesp butter

Method:

  1. Fry peppers with olive oil, when slightly tender.
  2. Add the tomatoes, cumin, chilli, salt and pepper, stir over medium heat for 5-10 minutes or until mixture thickens.
  3. Add eggs and slightly mix, leave on heat until eggs are cooked.
  4. Add butter on top, slightly mix in and serve with pita bread.
