Lebanese Chickpea Rice

Spicy rice with chickpeas, onion and garlic

Lebanese Chickpea Rice

Ingredients:

1 1/2 Cups Rice
400g Can Chickpeas
1 Onion, roughly chopped
2 Garlic Cloves, crushed
4 Tblsp Olive Oil
1 Tsp Turmeric Powder
1 Tsp Ground Cumin
1 Tsp Ground Coriander
Salt and Pepper to taste

Method:

  1. Boil and cook rice, drain then set aside to cool.
  2. In large frying pan heat 1 Tblsp of oil then saut the garlic and onions until lightly golden.
  3. Add rice, chickpeas, spice and remaining oil then cook for 5-10 minutes while gently stirring.
  4. Remove from heat and serve hot.
