2 cups cooked plain rice
300g chicken or beef livers cut into 1.5cm
1 medium onion chopped
1 small capsicum, chopped
1 clove garlic
˝ tesp ground cumin
˝ tesp ground chilli
˝ tesp black pepper
Salt to season
2 tabsp vegetable oil
- Heat the
oil in a pan then add the onion, capsicum and the garlic sauté for 2 minutes till soft.
- Add the spices and fry for 1 minute.
- Add the livers and fry for 2-3 minutes till brown.
- Add 2 tabsp of water and leave for another 5 minutes
to cook but don’t let it to dry add more water if needed.
- Mix the rice with the livers well [the rice needs to
be freshly cooked (or at least warm). Leave to stand for 2 minutes before serving for all the flavour to mix into the rice.
