Yogurt Green Bean and Cashew Pilaf
Rice with cumin, turmeric, green bean, yogurt cashew and pine nuts
1 Tblsp Vegetable Oil
2 cloves garlic, crushed
1 Onion, finely chopped
4 Cups Chicken Stock
2 Cups Rice
1 Tblsp Butter
Salt and Pepper to taste
1 Tsp Cumin Seeds
250g Green Beans, thawed
1/2 Cup Unsalted Cashew Nuts
1 Tblsp Pine Nuts
1/4 Cup Yogurt
- In a frying pan heat vegetable oil then sauté the onions and garlic until golden.
- Add the chicken stock, rice, butter, cumin, turmeric, salt and pepper.
- Bring to a boil then simmer on a low heat, gently stirring occasionally until rice is cooked.
- Add green beans, cashew nuts, pine nuts and yogurt, gently mix through and simmer for another 3-5 minutes then serve.
