500g carrots, peeled and coarsely grated
2 oranges, peeled, slice into small segments
1 small red onion finely sliced
2 tablesp orange flower water
1 tablesp lemon juice
2 tablesp extra virgin olive oil
1/2 teasp ground cumin
1 teasp icing sugar
1/2 cup fresh mint leaves
1/2 cup fresh coriander
salt and freshly ground black pepper to taste
Almond flakes for garnish
- Combine the orange water, lemon juice, olive oil, salt, pepper, cumin, and icing sugar in a bowl and whisk.
- Add the grated carrot, orange segments, onion, coriander and mint and lightly toss.
- Garnish with almond flakes
