Carrot and orange with red onion cumin fresh mint and coriander

Moroccan carrot and orange salad


500g carrots, peeled and coarsely grated
2 oranges, peeled, slice into small segments
1 small red onion finely sliced
2 tablesp orange flower water
1 tablesp lemon juice
2 tablesp extra virgin olive oil
1/2 teasp ground cumin
1 teasp icing sugar
1/2 cup fresh mint leaves
1/2 cup fresh coriander
salt and freshly ground black pepper to taste
Almond flakes for garnish


  1. Combine the orange water, lemon juice, olive oil, salt, pepper, cumin, and icing sugar in a bowl and whisk.
  2. Add the grated carrot, orange segments, onion, coriander and mint and lightly toss.
  3. Garnish with almond flakes
