Herb and Chilli Fish Stew

Fish fillets in a spicy and herb tomato sauce

Ingredients:

2 teasp Ground coriander
2 teasp Ground Cumin
2 teasp Ground Cardamom Seed
2 teasp Ground Pepper
2 teasp Ground Turmeric
1 teasp salt
3 tablesp olive oil
2 onions, chopped
3 cloves crushed garlic
1 large green chilli, chopped
1/2 cup chopped dill
1/2 cup chopped coriander
3 tomatoes, chopped
3 tablesp tomato paste
1 cups water
4 white fish fillets
2 tablesp plain flour

Method:

  1. Mix ground spices and salt.
  2. In a large pot, saute onions in 2 tablespoons oil.
  3. Mix in garlic, chilli, tomatoes, tomato paste and half of the spice mix.
  4. Add water cover and simmer for 10-15 minutes while preparing fish.
  5. Sprinkle remaining spice mixture on both sides of fish and dust with flour, fry fish in oil on both sides for 2 minutes until golden brown.
  6. Transfer fish from pan to the sauce pot, add dill and coriander.
  7. Add more water if needed to cover fish.
  8. Simmer gently for 15-20 minutes until fish is done.
  9. Serve with rice.
