4 Large Potatoes, peeled cut into 2-3cm cubes
1/4 Cup Fresh Flat Leaf Parsley, roughly chopped
5-8 Garlic Cloves, crushed
1 Lemon, Juiced
3 Tblsp of Olive Oil
Salt and Pepper to taste
- Fry the potato in hot oil until golden and crispy.
- In a frying pan, add the crushed garlic then sauté on a medium heat in the olive oil just for 2-3 minutes leaving the garlic a bit raw.
- Add the potatoes, salt and pepper, parsley and lemon juice to the garlic, mix well for 2-3 minutes then serve.
