1/4 cup Olive Oil
1 chopped Onion
500g Squash cut into chunks
2 Tablesp Fresh Chopped Parsley
250g Tomato wedges
1 cup water
1 clove Garlic crushed
Salt and Pepper to taste
- In a frying pan, sauté the onions in olive oil till
softened then add the crushed garlic and cook for one minute.
- Add Squash chucks to the frying pan and cook for 5
minutes then add tomato and parsley.
- Add water, salt and pepper, cover and simmer on low
heat for 10 minutes until squash is softened.
- Can be served with rice or pita bread.
