Kowaj Squash Stew

Squash cooked with Tomato, garlic and parsley

Ingredients:

1/4 cup Olive Oil
1 chopped Onion
500g Squash cut into chunks
2 Tablesp Fresh Chopped Parsley
250g Tomato wedges
1 cup water
1 clove Garlic crushed
Salt and Pepper to taste

Method:

  1. In a frying pan, sauté the onions in olive oil till softened then add the crushed garlic and cook for one minute.
  2. Add Squash chucks to the frying pan and cook for 5 minutes then add tomato and parsley.
  3. Add water, salt and pepper, cover and simmer on low heat for 10 minutes until squash is softened.
  4. Can be served with rice or pita bread.
