Spicy Tomato Chickpeas

Chickpeas with onion in a spicy tomato sauce

Spicy Tomato Chickpeas

Ingredients:

400g Canned Chickpeas, drained
1 onion, chopped
2 Tomatoes, chopped
1 Tblsp Lemon Juice
2 Tblsp Vegetable Oil
1 Tsp Cumin seeds
1/2 Tsp Chilli Powder
1 Tsp Ground Coriander Seed
1 Tsp Ground Ginger Powder
Salt and Pepper to taste

Method:

  1. In a large pot over low heat, warm oil and cumin and heat until cumin turns a darker shade of brown.
  2. Add salt, pepper chilli, ground coriander and ginger then mix well.
  3. Stir in tomatoes, chickpeas, lemon juice and onions.
  4. Cook and stir until chickpeas are soft and mixture has thickened slightly.
  5. Serve immediately.
