Ingredients:
2 Cup Instant Couscous
1 Tblsp Olive Oil
1 Medium Onion, finely chopped
2 Medium Tomatoes, diced
4 Eggs
1 Tsp Ground Cumin
Salt and Pepper to taste
1 Tblsp Flat Leaf Parley, finely chopped
Method:
- Cook couscous (follow packet instructions) then set aside.
- In large frying pan heat the oil then sauté the onions until lightly golden.
- Add tomatoes, cumin, salt and pepper, cook stirring for 1-2 minutes.
- Crack in eggs, scramble and mix well, cook for 1-2 minutes.
- Add couscous, mix well, cook for 1 munity then remove from heat.
- Garnish with parsley then serve.
