Chicken Shawarma

Middle Eastern wrap of sliced chicken

Chicken Shawarma

Ingredients:

1½ lbs chicken breast or thighs, thinly sliced
2 garlic cloves, minced
½ tsp cayenne pepper
½ tsp paprika
½ tsp cumin
¾ tsp mace
A pinch of salt
2-3 tbsp lemon juice
Pita bead to serve
(Hint - instead you can add Shawarma spice ready made from specialty stores)
 

Method:

  1. Prepare tahini paste or used a bought one.
  2. Preparing the chicken: Place chicken slices in a large bowl. In a small bowl, combine the spices the salt and garlic cloves. Add lemon juice and mix thoroughly. Spoon the mixture over the chicken. Make sure the meat is coated with the sauce. Cover and refrigerate for at least 8 hours so the flavors develop.
  3. Finishing up: In a lightly greased saucepan, brown the marinated meat with constant stirring. Cover and cook for approximately 30 minutes on a medium heat. Occasionally check for doneness. If the mixture appears dry, add 1-2 tbsp of water.
