Sweet potato with honey, cinnamon, saffron and raisins
1/2 kg sweet potatoes
1 tablesp honey
1 tablesp butter
1/2 teasp salt
1/2 teasp ground cinnamon
1/4 teasp pepper
1 teasp turmeric
a pinch of saffron
2 cups water
1/3 cup raisins
Cover raisins with boiling water and allow them to soak for 1 hour then drain.
Peel the sweet potatoes and cut into chunks then put in a pot along with the butter, honey, spices and 2 cups of water. Bring to a simmer, cover and cook for about 10 minutes or until the sweet potatoes are tender.
Add the raisins and continue simmering uncovered to reduce the sauce until it has a thick, syrupy consistency.
Remove the salad from the heat and serve with bread.
