Yemeni Meat and Oatmeal Soup

Spicy beef, onion, garlic and oatmeal soup

Yemeni Meat and Oatmeal Soup

Ingredients:

500g Beef
12 Cups Water
1/2 Onion, chopped
1 Tbsp Oil
1 1/2 Cups Oatmeal
1/2 Cup Milk
1/4 Tsp Ground Cloves
1/4 Tsp Ground Cardamom
1/4 Tsp Ground Turmeric
1/4 Tsp Ground Cinnamon
1/4 Tsp Ground Coriander
1/4 Tsp Ground Cumin
4 Garlic Cloves, crushed
Salt and Pepper to taste

Method:

  1. In a large saucepan heat the oil then sauté the onions until golden.
  2. Add water, bring to a boil then add the meat, reduce heat then simmer for 40-60 minutes then add in the oats, garlic and spices.
  3. Cook for another 40 minutes to an hour, stirring regularly to prevent sticking (add more water as it evaporates to maintain consistency).
  4. Add the milk then simmer for another 5 minutes then serve.
