Ingredients:
2 Cups Couscous
400g Can Chickpeas, rinsed, drained
500ml Boiling Water
2 Tsp Finely grated Lemon Rind
4 Medium Tomatoes, finely chopped
1 Lebanese Cucumber, finely chopped
1 Small Red Onion, finely chopped
1 Cup Flat-Leaf Parsley, finely chopped
Dressing:
½ Cup Yogurt
2 Tblsp Lemon Juice
2 Tsp Fresh Mint, finely chopped
Method:
- Combine couscous with the water and lemon rind in large bowl, cover stand for 5 minutes or until water is absorbed, fluffing with a fork occasionally.
- Meanwhile, make the dressing.
- Add tomato, cucumber, onion, parsley and chickpeas to couscous then mix gently.
- Serve drizzled with the dressing.
