Couscous with spinach

Ingredients:


1 cup couscous
1 cup hot water or chicken stock
50g baby spinach leaves
50g pine nuts toasted
50g sultanas
1 tabsp olive oil
1/2 red capsicum, deseeded, finely chopped

Method:

  1. In a large bowl put the couscous then add the stock mix it well, cover and leave for 10 minutes til liquid is absorbed.
  2. Separate the couscous using a fork til it's all nice and fluffy.
  3. In a pan heat the oil add the capsicum and fry for 2 minutes then add couscous, sultanas, spinach and pine nuts toss everything in the oil for just 1 minute then it's ready to serve.
