Ingredients:
1 Head Cauliflower 700g, Cut into Florets
2 Tblsp Extra-virgin Olive Oil
4 Garlic Cloves, crushed
1 Tsp Ground Cumin
1 Tsp Chilli Flakes
1/2 Cup Plain Yogurt
1 Tblsp Lemon Juice
Salt and Pepper to taste
Method:
- Pre-heat oven to 220c.
- Place cauliflower on a baking paper on a baking try then drizzle with oil.
- Sprinkle garlic, cumin, salt, pepper and chilli flakes. Roast 2-30 minutes, stirring once, until golden brown and tender. Let cool.
- In a food processor, puree cauliflower with yogurt and lemon juice.
