Ingredients:
4 Eggs
4 tomatoes, peeled, seeded and chopped
1 bell peppers, seeded and chopped
1 tablesp olive oil
1/4 teasp cumin
1/4 teasp chilli powder
Salt and pepper to taste
1 tablesp butter
Method:
- Fry peppers with olive oil, when slightly tender.
- Add the tomatoes, cumin, chilli, salt and pepper, stir over medium heat for 5-10 minutes or until mixture thickens.
- Add eggs and slightly mix, leave on heat until eggs are cooked.
- Add butter on top, slightly mix in and serve with pita bread.
