Ingredients:
2 eggs
2 tablesp flour
2 tablesp milk
2 tablesp finely chopped flat leaf parsley
1/3 cup crumbled feta
Pepper to taste
Red pepper flakes (optional)
1 tablesp butter or olive oil
Method:
- Mix all the ingredients together in a bowl until into a smooth mixture (not including the butter or olive oil).
- Heat oil or butter in a frying pan, pour in mixture one scoop at a time to make small rounds or the whole mix for a large omelette.
- When one side is cooked, flip it over.
- Serve hot, goes well with pita bread.
