Basil Cashew and Raisins Pilaf
Rice with basil, turmeric, peas, cashew and raisins

Ingredients:
1 Tblsp Vegetable Oil
2 cloves garlic, crushed
1 Onion, finely chopped
4 Cups Chicken Stock
2 Cups Rice
1 Tblsp Butter
1 Tsp Turmeric
2 Tsp Dry Basil Flakes
Salt and Pepper to taste
200g Peas, thawed
1/2 Cup Unsalted Cashew Nuts
1/4 Cup Raisins
1 Tomato, finely chopped
1/4 Cup olive oil
Method:
- In a frying pan heat vegetable oil then sauté the onions and garlic until golden.
- Add the chicken stock, rice, butter, basil, turmeric, salt and pepper.
- Bring to a boil then simmer on a low heat, gently stirring occasionally until rice is cooked.
- Add peas, cashew nuts, raisins, tomato and olive oil, gently mix through and simmer for another 3-5 minutes then serve.
