Ingredients:
2250g portabellas mushrooms, cleaned, sliced
1 small onion, finely chopped
2 clove glarlic, crushed
3 tablesp extra virgin olive oil
2 tablesp rice, rinsed, drained
1/4 cup water
Pinch of salt
Method:
- Sauté the onion with olive oil for about 2 minutes in a small pot, than add the rest of the ingredients and cover.
- Cook for about 20 minutes on low heat until the rice is cooked.
- Let it rest for about 5 minutes then serve.
