Ingredients:
1 1/2 Cups Basmati Rice
1 Medium Carrot, grated
2 3/4 Cups Chicken Stock
1 Tsp Turmeric
1 Tsp Ground Coriander Seed
1 Tsp Ground Black
1 Tsp Ground Cardamom
1 Tsp Groundginger
1 Tsp Fennel Seed
Salt to taste
1/4 Cup Pine Nuts
Method:
- Wash rice in a sieve until water runs clear.
- Soak rice for at least 15 minutes in a pot of cold water.
- Toast pine nuts in a small dry frying pan until lightly browned.
- Drain rice and add all ingredients to a large pot, cover and bring to a boil.
- Reduce heat and simmer for 15-20 minutes, still covered.
- Fuff with a fork then serve.
