Radish and carrot salad

Radish and carrot with ricotta, lemon and olives

Ingredients:


4 carrots diced
4 radish diced
1 cup ricotta chesses
¼ cup finely chopped flat leave parsley
¼ cup lemon juice
¼ cup olive oil [you can add more or less as you like]
2 cloves garlic crushed
½ cup black olives
Salt to season

Method:

  1. In a large bowl put the carrots, radish and the olives.
  2. In a another bowl add the chesse, parsley, oil, garlic, lemon juice and salt and mix them together well.
  3. Add the chesses mix into the carrot and radish mix and mix well and serve.
