Ingredients:
300g Couscous
2 Lebanese cucumbers, diced
3 medium tomatoes, diced
2 medium carrots, shredded
Hot chilli flakes
hand full of flat leaf parsley
Pomegranate syrup
Baby leaf spinach
Method:
- Soak couscous in boiling water for 10 minutes
- Add the diced cucumbers, tomatoes, and shredded carrots.
- Serve with baby leaf spinach and some extra pomegranate syrup on the side
- Add chilli flakes, salt and pepper on top
