Ingredients:
5 Large Potatoes, peeled and cubed
1/4 Cup Olive Oil
1 Tsp Ground Caraway
1/4 Tsp Ground Cayenne Pepper
Salt to taste
4 Tbsp Fresh Mint, finely chopped
4 Tbsp Fresh Coriander Leaves, finely chopped
4 Tbsp Fresh Parsley, finely chopped
3 Tbsp Lemon Juice
Method:
- Boil potatoes until cooked but still hold their shape.
- Heat the olive oil in a frying pan, add the potatoes, caraway, and cayenne pepper, salt and stir to lightly brown the potatoes.
- Remove potatoes from heat add the herbs, lemon juice then serve.
