Ingredients:
1 large eggplant
2 tablesp water
2 teasp salt
1/2 cup bread crumbs
2 eggs
1 1/4 teasp dried coriander
1 1/2 teasp cinnamon
2 tablesp vinegar
3 tablesp olive oil
2 large clove garlic
oil for deep frying
Method:
- Peel and
quarter eggplant, boil 30 minutes, add salt until it becomes well cooked and
falling apart.
- Drain the water, crush and stir it in a
bowl with bread crumbs, beaten eggs , 1 tabsp of oil, coriander and
cinnamon, mix well.
- Heat oil for deep frying, make mix into patties and fry until nice and
crispy looking.
- Make a sauce of vinegar, 2 tablesp oil and mashed
garlic.
- Pour sauce over pancakes before serving.
