Ingredients:
400g Canned Chickpeas, drained
1 onion, chopped
2 Tomatoes, chopped
1 Tblsp Lemon Juice
2 Tblsp Vegetable Oil
1 Tsp Cumin seeds
1/2 Tsp Chilli Powder
1 Tsp Ground Coriander Seed
1 Tsp Ground Ginger Powder
Salt and Pepper to taste
Method:
- In a large pot over low heat, warm oil and cumin and heat until cumin turns a darker shade of brown.
- Add salt, pepper chilli, ground coriander and ginger then mix well.
- Stir in tomatoes, chickpeas, lemon juice and onions.
- Cook and stir until chickpeas are soft and mixture has thickened slightly.
- Serve immediately.
